Brazil Minas Gerais Closed Natural (dry) melted coffee comes from a region known for its caramel and chocolate aromas, delicate and understated acidity, nutty, caramel, spicy and chocolate flavors, medium light to medium body and a smooth finish. In the natural process method, the whole cherry after harvest is placed in the sun to dry. Once dry, all the outer layers of the coffee bean are mechanically removed in one go. The resulting coffee tends to taste more fruity, more unpredictable, and heavier than wet-process coffees. This process is most common in coffees in the Harrar region of Ethiopia, Yemen, and parts of Brazil.
